Stuffed Pitas

Ingredients:

  • 6 mini pitas
  • 1 tomato - seeded and diced
  • 1 cucumber, seeded and diced
  • ½ cup plain yogurt
  • 1 cup Mozzarella cheese, shredded

Instructions:

  • Cut the pita bread in half and open it so that it is ready to accept stuffing.
  • Mix diced tomato and cucumber and yogurt together.
  • Fill pita pocket with the mixture.
  • Top with shredded mozzarella
