Fruited Carrots

Ingredients:

  • 10 carrots
  • 1 large can of pineapple chunks drain but save juice
  • 1 cup orange juice
  • 1 TBS cornstarch
  • 1 tsp. cinnamon

Instructions:

  • peel and cut carrots into coins
  • cook carrots in boiling water until tender
  • drain
  • mix pineapple juice with orange juice
  • add cinnamon and cornstarch to thicken
  • Add carrots and pineapple mixture and heat over medium flame until bubbly.
