Melon Ball Salad

Ingredients:

  • 8 ounces plain yogurt (non fat is fine)
  • ½ TBS. Ground ginger
  • 1 TBS. Lime juice
  • 1 tsp. Lime zest
  • 2 tbs. Honey
  • 4 cups melon balls(combine different kinds and colors)
  • 2 TBS. Finely chopped crystallized ginger.

Instructions:

  • Strain yogurt through coffee filter or cheesecloth, preferably overnight.
  • Combine yogurt, lime, lime zest, ginger and honey.
  • Pour over melon balls and toss gently.
  • Sprinkle with crystallized ginger.
