Beef Kabobs

Ingredients:

  • 2 lbs. Beef, cut into cubes
  • 1 (10 oz.) can of beef broth
  • 1/3 cup apple juice
  • 2 TBS. soy sauce
  • 3 cloves crushed garlic
  • assorted vegetables cut into cubes or thick slices, including: onions (peeled); cherry tomatoes (left whole); button mushrooms; corn on the cob (about 2 inch pieces); zuchnni; baby carrots

Instructions:

  • Heat broth, juice, soy and garlic and bring to a boil.
  • Simmer at reduced heat fro 5-10 minutes
  • Cool
  • Add beef cubes and cut up vegetables and marinate over night.
  • Thread onto skewers alternating meat and vegetables.
  • Baste while cooking on grill
