Mexican Wedding Cookies

  • 1 pound butter (do not substitute)
  • 1 cup confectioner's sugar
  • 3& ½ cups flour
  • 2 cups chopped pecans
  • 2 teaspoons vanilla
  • additional confectioner's sugar

Instructions:
Cream butter. Add sugar and cream well. Beat in flour, pecans and vanilla.

Shape into walnut size balls and place on an ungreased cookie sheet. Flatten each cookie using the bottom of a glass that has been dampened with water.

Bake in a 350 degree oven for 15 minutes. The tops will remain white.

Remove to cooling racks. While still warm coat both sides with confectioner's sugar and return to racks. Additional sugar can be put on before cookies are stored or served.

Note: if dough is too soft, do not add flour. Refrigerate dough till you are able to shape into balls.
