Stuffed Cherry Tomatoes
- 2 pints cherry tomatoes
- ¼ cup Mayonaisse
- ½ cup Parmesan cheese
- 6 scallions chopped including about 1 inch of green on each
- 1 pound bacon cooked and crumbled.
- Gently wash tomatoes and remove tops
- Carefully scoop out seeds and pulp
- Drain tomatoes on paper towel
- Mix ingredients with seeds and pulp from tomatoes
- Stuff each tomato
- Chill and serve.
