Roasted Leg of Lamb with Ham

Ingredients:

  • 1 bone-in leg of lamb 8-10 lbs.
  • 6 loved slivered garlic
  • 8 TBS canola oil
  • 6 TBS lemon juice (fresh squeezed if possible)
  • 2 TBS Oregano
  • Salt and pepper to taste
  • 6 slices ham, sliced thin.
  • 1 cup Ginger ale
  • ¼ cup Cognac (if you choose not to use the Cognac you may want to increase the Ginger ale) )

Instructions:

  • Preheat oven to 275 degrees
  • Cut small incisions into room-temperature lamb and insert garlic slivers.
  • Heat oil in frying pan and brown lamb on all sides.
  • Place lamb on rack in roasting pan.
  • Pour lemon juice over top.
  • Sprinkle with oregano, salt and pepper
  • Lay the ham slices over the top and drench with ginger ale
  • Cover pan and cook for 30 minutes
  • Increase oven temperature to 350 degrees
  • Add cognac
  • Bake an additional 45 minutes, basting frequently with pan drippings. Add more cognac or ginger ale as needed.
