Ham and Cheese Frittata

Ingredients

  • 1 ½ Tbls butter
  • 1 c (5 oz) diced ham
  • ½ c chopped onion
  • ½ c diced red pepper
  • 6 eggs
  • ¼ c Parmesan cheese
  • ¾ c small curd cottage cheese
  • 1/8 tsp pepper
  • ¼ c shredded cheddar cheese

Instructions

  • Preheat the oven to 350 degrees.
  • Melt the butter in a 10 inch sautee pan
  • .
  • Saute the ham, onion, and pepper until soft and lightly browned.
  • In a separate bowl, whisk the eggs until well blended.
  • Add the Parmesan and cottage cheese, and the pepper
  • .
  • Mix well.
  • Pour over the ham, peppers, and onions.
  • Cook, stirring, occasionally at first, from the sides to the center until the bottom and sides begin to set up and brown
  • Sprinkle with the grated cheddar cheese.
  • Finish cooking in the oven for about 15 minutes, or until the center is firm and the cheese on top is melted.
